The best chewy chocolate chunk cookies

Preheat oven 175 degrees (350 farenheit)
225 g butter, softened
125 g white sugar
150 g packed muscovado sugar
2 eggs
10 ml vanilla extract
350 g all-purpose flour
5 g baking soda
10 ml hot water
pinch of salt
200-250 g black chocolate roughly chopped in small chunks (or chocolate chips if you prefer)
Cream the butter with the white and brown sugar.
Add the eggs, one at a time, then the vanilla, baking soda (mixed with the hot water to dissolve), salt and flour. Mix well and add the chocolate chunks (or chips). I like to make my own chunks but chocolate chips are good too. Instead of black chocolate, you can use white, praline, milk chocolate. As you like!
Take a teaspoon and create a little ball and line them up on a non-stick cookie pan. Make sure the portions are not too big or your cookies will be too large. Bake for 10 min max – you want them chewy in the middle. Remove from pan and transfer to a wire rack to cool. Enjoy!
Hi, these cookies look lovely, I’m sure my daughter would love to help me make a batch this week. Just a question, I only have access to French ingredients and wondering if “all-purpose flour” is our regular “farine de blé” and the “baking soda”, is that French “levure”? Sounds daft perhaps, I know these other ingredients can be found in the UK……thanks!
Hi Elizabeth, as I live in médoc we most problably have access to the same products. It is indeed ‘Farine de Blé’ (I buy Francine brand) and baking soda is levure chimique (I buy Alsa). For the chocolate ‘chunks, I buy Nestlé chocolat Corsé patissière and chop it up. I hope this helps! Have a nice day and enjoy baking with your daughter. ps: Cookies, in my opinion, (and especially the kid’s opinions, is better slightly undercooked so they are more chewy and they cool down).
Thanks for your kind and in-depth reply. These’ll make a welcome surprise for the kids after school. I’m enjoying testing the recipes, made the Carrot cake this week, it was all gone by bedtime!
